                Squid Salad

 

Squid
Chopped onions
Diced Celery
Sliced green & red pepper (for color)
Olive Oil
Salt & pepper
White Vinegar

 

Gently boil Squid pieces in lightly salted water (no more than 20 minutes). Let Squid cool in the cooking water. In a separate pan saute chopped onions (for looks the onion could be sliced only), diced celery, sliced green and red peppers (for color). Sauté these vegetables in Olive Oil, salt and pepper to taste. In a glass dish put in the Squid and vegetables and add to mixture a white vinegar and marinate for 12 hours. Serve cold.

Surprises are foolish things. The pleasure is not enhanced, and the inconvenience is often considerable.
