James Texas Crab

 

1 cup mayonnaise
Salt, black pepper and Cayenne pepper
2 tbs catsup
Tabasco brand pepper sauce
3 tbs olive oil
1 tbs wine vinegar
2 tbs grated onions
1 chopped jalapeno chopped (optional)
2 tbs minced parsley
6 tbs heavy cream, whipped
1 to 2 tbs chopped ripe olives
1 lb flaked crab meat
4 to 6 large tomatoes
lettuce
Sliced hard cooked eggs

Blend together mayonnaise, catsup, Tabasco, olive oil, vinegar, onion, parsley and whipped cream.
Add salt & pepper to taste. Stir in olives and chill 1-2 hours. Add crab meat.
Slice tomatoes in half; place on salad plate. Pile crab salad on tomatoes, garnish with lettuce and eggs.
