Sherry's Salmon Croquets
1 egg, slightly
beaten
salt & pepper
2 shakes red hot
sauce
1-1/2 cups seasoned fine dry bread crumbs
1/2 cup mayonnaise or salad dressing
1/4 cup chopped onion
1 14-3/4-ounce can salmon, drained, flaked, and skin and bones
removed
1/4 cup cooking oil
In a
bowl combine the egg, 1 cup of the bread crumbs, the mayonnaise, onion, and
parsley.
Add salmon to egg mixture and lightly stir to mix.
Form mixture into 6, 3/4-inch-thick
patties (about 3-1/2 inches in diameter)
coat both sides with cornmeal
In a skillet cook patties in hot oil
over medium-low heat for
4 to 6 minutes or until golden brown, turning once.
Salmon Patties
1 can of pink salmon
1 egg
1 /2 Cup fresh bread crumbs
1teaspoon Old Bay Seasoning
salt and pepper to taste
Vegetable Shortening for frying
Pick any bones out of salmon. In a mixing bowl, beat egg and add
salt, pepper,
Old Bay, bread crumbs and salmon. Gently mix until just combined.
Drop mixture by large spoonfuls into the hot shortening and press flat
with a
spatula. Cook until golden brown on each side, about 3 to 5 minutes.
