Crowned Salmon
1 can (213 g) salmon, undrained
1/4 cup chopped celery
2 tbsp. chopped onion
1/4 cup grated Old Cheddar cheese
2 tbsp. light mayonnaise
1 tbsp. lemon juice
1/2 tsp. dried dill
Dash freshly ground pepper
Biscuit Dough 2 cups all purpose flour 4 tsp. baking powder 2 tsp. granulated
sugar 1/2 tsp. salt 1/2 cup butter or margarine 3/4 cup low fat milk
Instructions:
Salmon Filling:
In medium bowl, flake salmon. Add remaining ingredients. Mix well. Set aside.
Biscuit Dough: In bowl, combine flour, baking powder, sugar and salt. Cut in
butter until mixture resembles coarse cornmeal. Stir in milk to make a soft
dough. Knead on floured board 10 times. Roll out to 16" x 13"
rectangle.
Preparation:
Spread salmon filling evenly over dough to within 1/2-inch of edges. Roll up,
jelly roll style, starting with long edge. Bring ends together to form a ring.
Place on greased baking sheet. Slit dough 3/4 through from outside edge to
center at 1/2-inch intervals. Gently pull slashes open. Bake at 375 degrees F
for 30 - 40 minutes or until dough is golden brown.
