Lynn's Spanish Chorizo

 

Ground pork: 1 lb.
• Coarse salt: 1/2 tablespoon
• Garlic, crushed or finely chopped: 1.5 cloves
• Ground nutmeg: 0.4 teaspoon
• Brown sugar: 0.8 tablespoon
• Smoked paprika : 0.8 tablespoon
• Aleppo pepper: 0.8 tablespoon

Mix all the ingredients together and refrigerate for 24 hours. Stuff into medium hog casings.
