Chorizos
2 lb lean ground pork or 1 lb
each ground beef and pork
4 tbsp vinegar
1-2 tbsp chili powder
2 tsp salt
3/4 tsp black pepper
1/2 tsp oregano, crushed
2 cloves garlic, mashed
1/8 tsp crushed cumin seed
1/4 tsp allspice
2 small, hot red peppers, minced
mix all ingredients well.
shape into several long 1 inch rolls 2 inch in diameter, and wrap in aluminum
foil. store in refrigerator. fry as needed, shaped into
patties , balls or links of desired length. spices should be given time to
get acquainted, however.
