Shanna's Yam Sausage Apple Casserole

 

1 can 24 oz. yams in syrup, drained
1 lb. pork sausage
4 large unpeeled apples, cut in thick wedges
salt
2 Tbsp brown sugar

Preheat oven 350°
Cut yams in thin slices, arrange half in shallow 1-1/2 qt. baking dish
Shape sausage in 6 patties 1/2" thick & arrange on yams
Cover with apple wedges & sprinkle with salt
Top with remaining yams
Brush with water, sprinkle w/ brown sugar
Bake 350° 1 hour
Makes 6 servings
