Granny's Cajun Sauce

 

1 Onion, cut in half and Thinly sliced 
1 Green bell pepper, Julienne 
2 Ribs celery, julienne 
2 cl Garlic, minced 
5 chopped black olives
2 tbs oil 
1 can (16 oz) tomatoes, including Liquid 
Salt & pepper
3 tesp Paprika
1 tbs cumin 
5 tesp Worcestershire sauce 
5 tesp  red hot sauce 
 1 c Tomato juice
1 1/2 tbs Cornstarch

Place oil in pot and add onion, pepper, garlic and celery and cook till tender. Drain tomatoes and reserve liquid, coarsely chop tomatoes and olives and add to pot with. Add tomato juice, Worcestershire, hot sauce and seasons and cook about 8 min. Mix cornstarch and juice from the tomatoes liquid reserved add to pot and cook until thick.

Great on Eggs and muffins
