 Lynn's  Green Olive  Sauce

 


2 tbs plus 1 tsp olive oil
1/4 cup minced onion2 tsp minced ginger
2 in piece cinnamon
pinch saffron or 1/2 tsp turmeric
Kosher salt
Black pepper
2 cups rich chicken stock
2 tbs minced green olives
2 tsp lemon juice
1 tbs coarsely chopped cilantro

Place 2 tbs olive oil in a small pan over medium heat add onion, ginger, cinnamon, saffron and pinch of salt and cook , stirring frequently for about 5 min. Add the stock and increase the heat to high and cook until the sauce is reduced about 3/4 and becomes syrupy, whisk in olive oil, olive, and salt and pepper cook about 2 min  over medium high heat, stirring once or twice. Turn off heat add lemon juice and cilantro and remove cinnamon stick
