   Kat's Bacon Vinaigrette

 

8 slices bacon
4 minced shallots
Salt & pepper
4 tbs cilantro
3/4 cup red wine vinegar
2 cloves garlic minced
3/4 cup olive oil
1 chopped jalapeno or serrano
1/2 cup sliced stuffed olives

Fry bacon until almost crisp and crumbled, add shallots cook about 5-6 mins, add garlic and cook 2 more mins.
Add vinegar, salt and pepper and cook until almost half. Add olive oil and remove from heat add crumbled
 bacon and olives.
