Cullen's Fresh Tuna Grilled Burger
12 oz fresh tuna ground, chilled
4 x scallions - (to 6) chopped
1 1/2 tbl chopped pickled ginger
2 1/2 tbl soy sauce
Freshly-ground black pepper to taste
4 slc brioche loaf crust removed
Method :
Put tuna in a chilled bowl. Add chopped scallion, pickled ginger, soy sauce and
pepper. Mix all of the ingredients lightly. Depending on the size burger you
want, divide the mixture into 2 or 4 patties and form your burgers.
Heat your grill or skillet over medium flame. Place brioche slices on grill and
toast. Remove slices and place patties on grillpan sear to your desired
doneness. Rare to well.
This recipe yields 2 to 4 burger patties.
