                             Cataplana

 

1 med onion, chopped
2 tbs olive oil
1/2 cup diced smoked ham
1 tbs oregano
2 cups chicken stock
2/3 cup ketchup
1/2 cup heavy or whipping creme
1 tsp Tabasco sauce
3/4 pd large shrimp, shelled
3/4 pd squids, cleaned bodies cut into rings
3/4 pd cooked lobster meat cut into chunks
salt & pepper
4 cups cooked rice

 Sauté onion in 1 tbs olive oil till tender. In a large saucepan heat the remaining tbs of oil
over medium heat. Add the onions , ham and oregano; cover and cook until the mixture is fragment
about 3 min. Stir in stock, ketchup, cream and Tabasco and bring to a boil. Immediately add the
shrimp, lobster and squid. Retun to a boil, then simmer 2 min or until shrimp is pink. Serve with rice.  Seafood Sauces
