Shanna's Clam Cakes
1 lb. Clam meat
3 eggs
2 c. bread crumbs
1 1/2 c. sautéed vegetables (onions, celery, red and green peppers)
Using cooked clam meat, the meat should be chopped or minced. Mix the meat
with diced onions, celery, and red and green peppers. The vegetables should be
sauteed until tender before adding to the cake mixture.
In a large mixing bowl, add the clam meat, sauteed vegetables, breadcrumbs,
and three raw eggs. Mix together well and form into cakes 3 inches in diameter
and about 1 inch thick. Thick cakes are easy to work with when frying. Fry
using medium heat until golden brown on each side.
“The pot calling the kettle black.”
In the seventeenth century, both pots and kettles turned black because they
were used over open fires. Today, this idiom means criticizing someone else for
a fault of one's own.
