Lynn's Fried Clams
1 lb. Clams
Seasoned Flour (flour, salt, white pepper, seasoned to taste)
Egg wash (1 Large Egg = 1/4 Cup, Equal amounts of whole eggs and milk mixed
together)
Seafood Breading
Cooking Oil
Cut the neck of surf clams
into strips. If using soft shell clams, remove the clam from the shell and cook
whole. Wash then dry the clams with a paper towl. Dust the clam meat with
seasoned flour. Shake off the excess flour and dip dusted clams into an egg
wash. Coat the clams with a good seafood breading and fry in oil that is
"hot". The hot oil will quickly cook the egg wash and this will hold
the breading onto the clam meat. If the oil is not hot, the breading will come
off the clams making a mess in your fried.
