Brothers Grilled Calamari with White Beans
4 servings
1 lb calamari, tubes or bodies split in half and scored
with knife
2 lemons, juiced
2 garlic cloves, sliced thin
2 tbsp pure olive oil
¼ tsp crushed red pepper
salt to taste
¼ cup minced Italian parsley
1 Spanish onion, cut into 4 pieces
1 bay leaf
2 sprigs of thyme
2 shallots, minced
1 cup small white beans
Pre-Heat grill. Combine lemon juice, garlic and olive oil and
pour over calamari. Let marinate for 1 hour.
Place white beans in a 1-quart pot, cover with cold water and
place over high heat. Bring to a boil, turn off heat, and allow beans to sit in
water for 1 hour. Add onion, bay leaf and thyme, place back on heat and simmer
for 30 minutes or until beans are tender. Remove onion, bay leaf and thyme and
allow beans to cool in their own liquid.
When ready to serve combine beans, parsley and shallot in
a saucepot and bring to a simmer. Season with salt. Place calamari on hot grill
and allow to cook for 2 minutes or until firm. Place beans in the bottom of a
shallow serving dish, top with calamari, and sprinkle with crushed hot pepper.
Serve immediately.
