Texas Hot Guts
4 lbs lean beef
4 lbs lean pork
1 lb fat pork
3 tbs salt
3 Tbs pepper
3 tsp red pepper
3 tbs sage
1'2 tsp ground saltpeter
Cut up meats and fats and put through a medium grinder blade. Combine
seasonings and blend in to the ground meat by hand and add more if desire.
To get right taste fry a patty. May be made into bulk sausage or stuffed into
casings and tied off into links
