Remove shrimp from marinade, discarding marinade.
Grill shrimp, covered with grill lid, over medium-high heat
10 minutes or until shrimp turn pink.

– finely shredded toss w/chopped cilantro
2 C. Black Beans – drained
1 C. Roasted Corn
Avocado
slices
Tortilla strips – cut thin and fried
Combine
black beans, roasted corn, roasted red peppers and red onion.
Arrange lettuce on plate; top with bean mixture.
Garnish with avocado slices,
Serve with Peanut Dressing topped
with Tequila Shrimp.
