 Shanna's Shrimp & Rice

 

2 bacon slices
1 cup coarsely chopped onions
1 16 oz can whole tomatoes
1/2 cup picante sauce
1 cup uncooked rice
2 large cloves minced garlic
1/2 tesp oregano
salt & pepper
1 pd cooked, peeled and deveined shrimp
1 green pepper cut into short thin strips
1 chopped jalapeno

cook bacon in 10 in skillet, remove bacon, add onion to drippings, stirring frequently till tender
Drain and coarsely chop tomatoes reserving juice. Add juice to picante sauce and enough water to make 21/2 cups of liquid. Add liquid to skillet with tomatoes, jalapeno, rice, onion, garlic, oregano and salt and pepper bring to a boil cover and simmer 20 min. stir in shrimp, cover and remove from heat, let stand until all liquid is absorbed about 5 min sprinkle with bacon
