Lynn's Buoy Shrimp
1 pound medium shrimp peeled and deveined.
¾ pound Roma tomatoes diced
¼ cup white onion diced
½ cup cucumber diced, with seeds removed
1 tablespoon chopped cilantro
2 each diced Serrano chilies
2 each diced avocadoes
1 ½ cups ketchup
2 tablespoons horseradish
2 tablespoon tapatio hot sauce
3 cups Clamato juice
8 each bay leaves
2 tablespoons whole black pepper
4 cups water
3 each limes juiced
In a large pot, bring water to boil with black peppercorns and bay leaves
for about 5 minutes. Add shrimp and turn off for 10 minutes, stirring every
couple of minutes.
Strain shrimp using a colander and then place shrimp in refrigerator to cool
down.
In a separate bowl, mix the rest of the ingredients together, then add
shrimp.
