Shrimp Casseroles

 

Lynn's Shrimp Potato Tomato

 

1/2 lb. mushrooms, sliced 
2 tbsp. butter 
1 med. onion, minced 
2 large tomatoes, peeled, seeded and chopped 
2 tbsp. flour 
1/2 cup light cream 
1/2 cup buttered bread crumbs, soft 
1/3 cup sherry 
1 tsp. Worcestershire 
1/2 tsp. tabasco 
2 tsp. salt 
1/8 tsp. pepper 
3 lb. shrimp, boiled, peeled and deveined 
Sauté mushrooms in butter until tender. Add onions and tomatoes and cook 10 minutes. 
Stir in flour and cream. Stir in sherry and seasonings. Add shrimp. Transfer to buttered casserole. Top with bread crumbs. 

Bake in moderate oven (350º) for 20 minutes or until top is browned.
