Shrimp Casseroles

 

Kat's King Ranch Shrimp

 

2 pounds peeled and deveined raw shrimp
1 (10 1/2 oz.) can chicken soup
1 (10 1/2 oz.) can mushroom soup
8 oz sour cream
1 onion, chopped
1 (10 oz.) can diced tomatoes and green chilies
1 (4 oz.) can green chilies
1 tsp cumin & cayenne power
12 ounces sharp cheddar cheese, shredded
10 corn tortillas, coarsely chopped


Heat all ingredients, except tortillas and cheese in a large skillet or medium stockpot. Transfer and layer mixture, tortillas and cheese in a 3 qt. casserole dish. (Reserve a little cheese for the top of casserole.) Bake at 350 degrees F for 30 minutes or until top is bubbly.
