Shrimp Casseroles

 

James's Shrimp Yellow Rice Casserole

 

3 lb Shrimp
1 box of yellow rice
1 lrg Onion
1 stk of butter
1 can Cream of mushroom soup
1 can Ro-Tel tomatoes

 Method :
Cook rice as directed on the package. Saute the large onion and shrimp in butter until the shrimp turn pink. Add the cream of mushroom soup, Ro-Tel tomatoes and cooked rice to shrimp and onion. Mix all ingredients together and pour into the pan. Bake at 350 degrees for 1 hour.
