Shrimp Casseroles
Lynn's Shrimp & Crab Au Gratin
1/4 cup Butter
2 tsp All-purpose flour
1 cup Heavy cream
2 x Green onions, chopped
1 cup Grated sharp Cheddar cheese
1/2 tsp Sugar
1 tsp Worcestershire sauce
Salt and white pepper
2 dsh Tabasco, or to taste
1/2 lb Crabmeat
1/2 lb Peeled shrimp
2 tbl Bread crumbs
Chopped parsley
Method :
Melt the butter in a heavy iron skillet, Add the flour and stir into the butter
over low heat. When blended, add the cream slowly and then add all the other
ingredients except the seafood, bread crumbs and parsley. Blend in over low heat
for 2 or 3 minutes. Fold in the seafood, transfer the mixture to a baking dish
and sprinkle with the bread crumbs. Bake in a 350 degree oven for about 15
minutes until bubbly. Sprinkle with chopped parsley and serve on toast points
with a salad and a chilled white wine.
Serves 2.
