Back To Slaw Salads

 

Lynn's Butternut Squash Capriccio 

1 butternut squash                                                
2 tbsp olive oil
2 cups shredded red cabbage                               
1 carrot, peeled and grated
1 apple, peeled and grated                                    
2 tbsp grated fresh horseradish
¼ cup cider vinegar                                              
2 tbsp chopped fresh dill
salt and black pepper to taste
Peel and thinly slice squash (neck only). Brush with olive oil. Season with salt and pepper. 
Lightly grill squash (or bake at 350 degrees) until soft. Place slices over entire surface of plates. 
Brush squash with your favorite flavored vinegar (ie maple, balsamic, raspberry) and flavored oil 
(ie walnut, extra virgin olive).

For the slaw, mix cabbage, carrot, horseradish, dill and apple with cider vinegar, season with salt and pepper. 
Place slaw in middle of plates.
