Cullen's Crunchy Coleslaw
1/4 cup plus 2 tablespoons cider vinegar
2 teaspoons vegetable oil
1 tablespoon plus 1 teaspoon sugar
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon ground white pepper
4 cups slaw mix
1/4 cup chopped onion
Combine first 6 ingredients; stir well with a wire whisk.
Combine slaw mix and onion in a bowl; pour dressing mixture over slaw, and
toss gently. Cover and chill.
