Smothered Chicken
James's Whole Smothered Chicken
1 roasting chicken, cut or 2 broiling chickens
Thin biscuits, split and cut
1 c. milk
Salt and pepper
1 tbsp. butter
Place chicken in baking dish, arrange biscuits around chicken; add milk,
seasonings and butter. Cover and cook at 425 degrees for 1 hour, basting
occasionally with hot milk. More milk may be added if necessary so there will be
sufficient left for gravy. Serve on a plate. Smothered with gravy and surrounded
with biscuits. Serves 4-6.
