Tex Mex Soup

 

Kat's Nacho Cheese Soup

 

5 1/4 oz au gratin potato mix
8 oz picante sauce
2 cup water
2 cup milk
6 oz shredded mild cheddar cheese
2 1/4 oz sliced olives, drained

In a medium-sized saucepan, combine the potato
mix, picante sauce, and water. Bring to a boil over medium-high heat.
Reduce the heat to low and simmer for 30 minutes, stirring
occasionally, or until the potatoes are tender. Add the milk, cheese,
and olive NOTE: This is great served with tortilla chips. Oh - you
can usually find the au gratin potato mix in the packaged potato and
rice aisle in the supermarket.
