Tex Mex Soup

 

Jose's Verde Tortilla soup

 

1 each cut into chunks                                   
small green bell pepper, and  med- yellow onion                          
 4oz chicken seasoned chicken stock
1/2 lbs each; celery and  carrots cut into 1 inch pieces                            
 1/3 cup olive oil                        
1/3 cup cilantro leaves                                   
1 tbs minced garlic                                        
2 tesp each; chili powder  and cumin
3qts. water                               
11/4 lbs tomatoes peeled and chopped coarsely                                                  
11/2 tesp cracked black pepper                    
2 sticks plus 2 tbs butter divided 
10 oz corn tortillas                    
1/2 cup flour 
2 lbs skinless, boneless chicken  breasts, grilled and diced into 1/4 in cube
Fried corn tortilla strips and grated Cheddar cheese for garnish

To taste; picante or other sauce Sauces Mexican

Place bell pepper, onion, celery, carrots and cilantro in food processor and finely chopped.
set aside in a large bowel. In a small bowel combine garlic, chili powder, cumin and black pepper
and stir into vegetables. Melt 1 stick plus 2 tbs butter and olive oil in large pan over medium heat
add vegetable mixture sauté stirring often until vegetables are transparent and lightly browned.
Finely chop 10 oz tortillas in food processor and add to vegetable mixture. Sauté over
