Kat's Basque Sausage Potato
1 lb Italian sausage, sliced
1/2 cup Chopped onion
2 can (16oz each) tomatoes
4 x White potatoes, pared and diced, (6 C)
1/4 cup Chopped parsley
1 cup Diagonally sliced celery
2 tbl Chopped celery leaves
1 1/2 cup Water
2 x Beef bouillon cubes
1 x Bay leaf
1 tbl Salt
1/2 tsp Dried leaf thyme
1/4 tsp Pepper
1 tbl Lemon juice
Method :
In large saucepan or kettle, brown sausage over medium heat. Add onion and cook
5 minutes. Add remaining ingredients. Bring to a boil, reduce heat and simmer
uncovered 40 minutes or until potatoes are tender.
