Lynn's Fried Rattlesnake

 

1 lrg Rattlesnake
1 qt Water
4 tbl Salt
1 cup Flour
1/8 tsp Paprika or to taste
    Freshly-ground black pepper to taste
1 pch Tarragon or to taste
1 pch Thyme or to taste
    Oil for frying

 Method :
Soak rattlesnake carcass for 2 hours in salted water. Rinse and dry meat well. Cut meat into chunks to fry. Coat each piece with mixture of flour, paprika, pepper, tarragon and thyme. Fry chunks of prepared rattler in oil until golden-brown.
