James's Fried Rattlesnake

 

1 x Rattlesnake - (4 lbs) skinned, gutted,
    and cut into 3" pieces
1 lrg Bowl ice water with ice
1 qt Buttermilk
1 cup All-purpose flour to 2 cups
    Seasonings to taste
    Cooking oil

 Method :
Pour cooking oil 2 inches deep in frying pan and heat to about 375 degrees. Allow pieces of rattlesnake to soak in ice water about five minutes or until very cold. Dip pieces, one at a time, in buttermilk and roll in flour. Cook on each side about 5 minutes or longer if snake is exceptionally large.
This recipe yields 4 servings.
