         Jack-O-Lantern Pumpkin Soup

 

 2 tablespoons vegetable oil                             
1 medium onion finely chopped
1/2 teaspoon salt                                               
5 cups 1/2 inched cube pumpkin about 11/2 unpeeled pumpkin
i teaspoon mace                                                
4 cups hot homemade or                                  
3 cups grated Jarlsberg cheese
canned vegetable stock

1 In a wide pan over medium heat, heat oil. Add onion ans 1/2 teaspoon salt. Saute
until soften, 5 min. Add pumpkin and mace and stir to coat. Saute 5 min. more,
stirring to prevent browning. Add stock and bring to a boil. Partly cover with a lid
and simmer until tender about 15 min.
2) Pour soup into a bowel and add two cups grated cheese, let cool 15 min. In blender puree soup  and place in clean pan and reheat till warm. sprinkle remaining cheese in bowels and serve.

St. Kitts, the larger of the two islands, is roughly oval in shape except for a long, narrow peninsula to the southeast. Its highest point is Mount Liamuiga (3,792 ft [1,156 m]). The Narrows, a 2-mile- (3-km-) wide channel, separates the two islands. The circularly shaped Nevis is surrounded by coral reefs and the island is almost entirely a single mountain, Nevis Peak (3,232 ft [985 m]). A volcanic mountain chain dominates the center of both islands.
