Sausage Vegetable Soup
1 Pkg Hot Italian Sausage, casings removed, crumbled
1/2 cup Olive Oil
3 Tbsp Butter
1 cup Onion, thinly sliced
1 cup Carrots, diced
1 cup Celery, diced
2 Cups Potatoes, peeled, diced
2 cups Zucchini, diced
1 cup Green Beans, diced
2 cups Savoy (curly) Cabbage, shredded
6-8 cups Meat or Chicken broth 2-3 cans Water
1 cup canned Italian Tomatoes with Juice
1 cup White Rice
1-1/2 cups canned Cannelli beans, drained
Salt & Pepper
In Large sauce pot or soup pot, sauté meat in Oil and Butter over
high heat, just to brown.
Add Vegetables in order on left, Cooking 3-4 minutes between each.
Add rice, simmer covered 30 minutes.
Check Seasonings and Serve with Pesto or Grated Cheese
Serves 8-10
