 Kat's Beer Cheese Soup

 

8 slices bacon
2 cloves garlic minced
11/2 cups minced onions
1 cup julienne bell pepper
3 cups chicken broth
12 oz beer
1/3 cup flour
2 cups shredded Cheddar cheese
Salt, cayenne & pepper
2 tbs cream sherry

Cook bacon crisp, reserving 2-3 tbs bacon fat. Crumble bacon and set aside.
Saute onions, garlic and peppers until tender, stir in broth. Add beer and bring to a boil.
Toss together cheese and flour and add a handful at a time, blend into soup, let melt
before adding another. Return mixture to a boil and cook stirring constantly until
slightly thickened. Add seasonings and sherry. Sprinkle bacon on top.
