Back To Stuffed Peppers
Turkey Stuffed Peppers
1 ½ lb skinless ground turkey
1 large onion, diced
½ cup bread crumbs
1 egg
1 tsp minced garlic
1 cup diced mushrooms
4 large or 6 medium bell peppers (red, yellow or green)
1 28 oz can diced tomatoes
salt and pepper to taste
Mix the turkey, onion, egg, garlic, mushrooms, salt, pepper and
¼ of the canned tomatoes.
Core the peppers and stuff with the meat mixture. Place the peppers hole side up
in a baking or
casserole dish with tall sides. Pour the remaining tomatoes over the peppers,
cover and
bake in a preheated 350 degree oven for 1 hour.
One of the Windward Islands of the eastern Caribbean, St. Lucia lies just
