                Onion Stuffed Peppers

 

 
10 bell peppers
1 1/2 lb. ground beef
1 onion
3/4 c. rice
Salt and pepper
1 egg
2 tbsp. butter
2 tbsp. flour
4 c. cold water
1 bottle ketchup
1 tsp. sugar

Fry onion in oil. Put in meat. Cook rice and add to meat mixture. Add salt and pepper. Stir in one egg. Stuff peppers.

For sauce to pour over peppers: Mix 2 tablespoons butter and 2 tablespoons flour. Put in 4 cups cold water and 1 bottle ketchup. Let this mixture come to a boil. Add sugar. Place stuffed peppers in a large bread pan (with sides). Pour sauce mixture over peppers. Boil at low temperature. May have to stir sauce to avoid burning. Cook for 45 minutes. Serve hot

                                      Stuffed Peppers

 
8 med.-size green peppers
1 lb. ground beef
1/2 c. chopped onion
1/2 tsp. salt
1/2 lb. fresh mushrooms,
 sliced

2 c. chopped fresh tomatoes
1 c. cooked rice

Cut tops of peppers and wash them out. Place peppers in an 8x8 inch ceramic dish. Brown ground beef and onion in frying pan. Add salt, tomatoes, mushrooms and cooked rice. Fill peppers with stuffing mix. Cover with plastic wrap. Microwave on high for 9-11 minutes until peppers are tender
