Back To Stuffed Peppers
Spanish Rice Stuffed Peppers

6 peppers
2 lbs. ground beef, browned & seasoned with garlic salt
1 onion, finely chopped
1 sm. can tomato sauce
1 can tomatoes, mashed
1 c. tomato juice
Canned mushrooms (opt.)
1 c. tomato soup
Some catsup (pour from bottle)
Add above to ground beef. Rinse all cans with water
and add salt and pepper to taste. Simmer 2 to 3 hours or until thickened. Add
cooked rice. For stuffed peppers, cut peppers in half. Clean and core. Bring
water to a boil. Add peppers. Cook 5 minutes or until tender. Spoon Spanish Rice
on peppers.
