James's Sautéed Clam Squid Cider Onions
3 tbl Butter
1 bn Spring onions, trimmed and sliced
250 ml French cider, reduced down to 125ml
1 kg Clams, washed
200 gm Fresh squid, cleaned and finely sliced
200 gm Small cubed potato, cooked
Method :
Melt the butter in a pan and add the spring onion and cook until softened.
Then add the remaining ingredients and cook for 5 minutes. Discard any clams
that have not opened and serve.
