James's Mountain Squirrel Dumpling

 

2 x Squirrels cut serving pieces 
3 tbl Butter 
3 cup Water 
1 tsp Salt 
1/8 tsp Freshly-ground black pepper 
1/3 cup Sliced onion 
1/2 cup Diced celery 
1 cup Carrot sticks 
2 tbl Flour - (to 3 tbspns) 
    Prepared dumpling doughDumplings

 Method :
Brown meat in butter. Cover with water, season, and simmer for 1 hour. Add onion, celery, and carrot, and more water if needed, and cook for 15 minutes. Thicken with flour dissolved in 1/4 cup water. Drop in dumpling dough, cover, and steam for 12 to 15 minutes.
This recipe yields 4 servings.
