Cullen's Fried Squirrel & Ham

 

1/2 lb Ham slice diced and browned
    (or 1/4 lb bacon)
2 x Squirrels cut into pieces
    Flour
    Salt to taste
    Freshly-ground black pepper to taste
2 tbl Butter
2 tbl Oil
1 cup Dry white wine
1/2 tsp Marjoram
1/2 tsp Rosemary
2 x Garlic cloves minced
1 dsh Tabasco sauce
1/2 tsp Worcestershire sauce

 Method :
Brown the ham pieces until crispy or cook and crumble the bacon. Shake the squirrel pieces in flour, salt, and pepper and saute until brown in butter and oil, turning often for about 12 minutes. Add remaining ingredients, cover, and cook over fast simmer for 20 minutes more.
