Shanna's Prawn Squid Salad
750 gm medium king prawns
500 gm cleaned squid
1 x red capsicum, sliced
1 x green capsicum, sliced
Dressing:
3/4 cup chopped parsley
3 x cloves garlic, crushed
3/4 cup oil
1/3 cup lemon juice
1/2 tsp sugar
salt and pepper
cos lettuce
Method :
1. Shell prawns and devein, place in a salad bowl or dish. Slice squid in to
thin rings. Place in a saucepan with a little water and bring to the boil. Lower
heat and simmer for 3-4 mins or until white in colour, drain, cool and add to
prawns. Add sliced capsicum to prawns and squid.
Dressing:
2. Place all dressing ingredients in a jar and shake well. Pour over salad and
mix well.
3. Chill in fridge for at least 1 hour before packing or serving. Serve salad in
cos lettuce.
