James's Sicilian Sauce

 

2 tbs olive oil
1 medium onion thinly sliced, separated into rings
4 small tomatoes, peeled seeded, chopped or 1 16 oz can whole peeled tomatoes
1/4 cup sliced stuffed olives
1/4 cup pine nuts, lightly stuffed
1/4 cup raisins
3 Serrano peppers chopped (Optional)
2 tsp capers
2 cloves minced garlic
Hot pepper sauce to taste
Salt & pepper

Heat oil in a skillet. Add onion rings; sauté 2-3 min. Add tomatoes, olives, pine nuts, raisins,
Serrano, capers, garlic and hot pepper sauce. Cook 5 min over medium heat, stirring occasionally.
Season with salt & pepper. Makes about 3 cups

This can be poured over food and cook or pour over cooked food
