Cullen's
Sichuan Peanut Sauce
10 oz unsweetened chunky peanut butter
4 tbs soy sauce
3 tbs water
2 to 3 tbs sugar
12 cloves garlic minced
2 tbs plus 2 tsp hot chili oil
1 cup fresh chopped cilantro
Process everything but cilantro in a food processor. Stir in cilantro and
refrigerate.
The mixture may be kept in tightly cover container for months.
To use for chicken or fish, spread on top as it comes from the stove.
To use with noodles, mix mixture with enough water to make it thick but
slightly runny
and stir into hot noodles.
