Granny's Butter Cilantro Ginger Sauce 

1/2 cup (1 stick) unsalted butter
5 tablespoons fresh grated ginger
1/4 cup soy sauce
1/4 cup water
1 tablespoon minced garlic
1/4 cup lime juice, fresh
5 tablespoons granulated sugar
2/3 cup fresh cilantro leaves cleaned and coarsely chopped
1 teaspoon fresh ground black pepper

Place all ingredients (except cilantro) in saucepan and simmer on medium heat for 10 minutes. Remove from heat. Just before serving, reheat to a simmer and add cilantro just before saucing the entree. Yield: 1 1/3 cups. Served 6 to 8.

Note: The sauce is delicious with grilled fish, especially tuna or swordfish.
