Lynn's Muskrat & Fry Bread
1 or 2 whole muskrat (skinned)
6 potatoes cut in half
3 thick slices of salt pork
Dumpling Recipe: (To be added later)
2 c of flour
1 tsp of baking powder
A dash of salt
Add about ? c of milk or more( a bread dough consistence) to ingredients
Process:
Put the muskrat in a medium-sized pot and cover with water. Cover the pot and
boil for half an hour. Then add the potatoes, cover and continue to cook until
the potatoes are partially done. Fry the salt pork separately and add to the
mixture. Now add the dumplings to the stew (about a tablespoon of dough per
dumpling) . Cover and cook for about 10 minutes. Remove the cover and continue
to cook for another 10 minutes. Can be eated with fry bread (tumasis). The feast
is on!
Recipe for Tumasis (Passamaquoddy Fry Bread)
2 c flour
2 tsp baking powder
? tsp of salt
? c water or milk (sticky mixture)
Heat ? c oil in black frying pan
Mix all ingredients together and add liquid to desired consistency . Fry on
medium heat and cook slowly until brown. Turn over and cook until done.
