Pork Hominy Stew

 

4 cups cooked hominy
1 pd pork shoulder cut into chunks
salt and pepper
1 tbs oregano
1 dried chipotle
1 tbs cumin
1 large onion chopped
1 tbs garlic minced

   Combine first 7 ingredients in saucepan add enough water to cover by an 1 inch
 bring to a boil then adjust heat to simmer one hour until pork is tender; stirring
occasionally and add water if necessary. Stir in garlic and cook a few more mins.
