Sausage Kale Stew
1 lb. Hot Sausage
2 Tbs Olive Oil
2 cups diced Potatoes, raw
1 medium Onion, chopped
2 Tbs Garlic, minced
1 Lb Kale, washed, drained, Coarsely Chopped
1 16oz Can diced Tomatoes
1 15oz can Garbanzos, rinsed & drained.
2 Cans 14-1/2oz Chicken Broth
Salt & Pepper to Taste
In a Heavy Bottomed Pot, Brown Premio Sausage in Olive Oil.
Remove.
Add Potatoes, Onion & Garlic, stir and cook for 3 minutes.
Slice sausages into 3/4" slices and add to pot.
Add Kale, cover pot and cook until Kale is Wilted.
Add Tomatoes, Garbanzos and Chicken Broth.
Taste and Add Salt & Pepper to Taste.
Bring Pot To Boil, Lower heat, and simmer for 30 minutes.
Serve with Crusty Bread.
