James's Beef Wellington

 

4-5 lb. filet of beef
Pillsbury Croissant Rolls
Salt, pepper and season-all

PATE:

3/4 lb. chicken livers
1 med. onion, sliced
3 eggs, hard boiled
3 tbsp. chicken fat

While filet is roasting, prepare pate. Roast filet uncovered for 45 minutes at 350 degrees. Saute livers and onion in fat until livers are no longer pink and onion is slightly brown. Grind or chop livers, onions and eggs until smooth. Remove filet from oven and coat with thin layer of pate.

Flatten rolls into a rectangular shape. Center the coated filet on the rectangle and seal. Bake an additional 20 minutes (no longer). Topping will be golden brown.
