Castro's Apple-Pecan Dressing

 

1 recipe corn bread cool  and crumbled              
1/2 lb of bulk sausage cooked and crumbled
1/2 cup chopped pecans
3/4 cup butter or margarine                                              
1 8 oz package herb seasoning  stuffing or 4 cups seasoned croutons              
3 beaten eggs         
3 tbs chopped fresh parsley 
1/2 cup chopped pecans                         
2 cups chopped apples
1/2 tesp cinnamon, ginger or  poultry seasoning                      
2 cups apple juice or 1 cup each apple juice and 1 cup turkey stock                                    
1 cup each; sliced celery and chopped onion                            


 in bowel combine corn bread, stuffing mix, parsley, dash of salt and cinnamon; set aside.
Melt butter in skillet over medium heat; add celery and onion and sauté 8-10 min or until
tender. Stir celery mixture into corn bread mixture. Stir in sausages, juice, apples, eggs, 
and pecans, mix well. In greased 3-quart dish bake 30-35 min
