Lynn's Chestnut Dressing

 

2/3 cup butter                                                     
1/2 cup diced onion
1 tbsp poultry seasoning                                    
2/3 cup diced celery
2 cups finely chopped cooked                           
10 cups bread crumbs 
chestnuts (See note)                                          
1/2 tesp black pepper
2 tbs parsley flakes or 6 tbs                                
1 tesp sherry
fresh chopped parsley  


Melt butter in large skillet over medium heat. Add onions and celery sauté  until soft .
Stir in  chestnuts and heat through. In a bowel, combine onion mixture, bread crumbs
parsley, poultry seasoning, salt, pepper and sherry, toss lightly to combine. 
Put in greased dish or turkey and bake
   

Prepare chestnuts; Place chestnuts in large saucepan and cover with water, boil for
20 min. and take out of water one at time and peel. Cool and finely chop
